
Yasai Tempura (Japanese Vegetable Tempura)

Ingredients:
- 2 cups mix vegetables (like bell peppers, zucchini, carrots, sweet potatoes)
- 1 cup all-purpose flour
- 1 cup cold water
- 1 egg
- for frying vegetable oil
- to taste tempura dipping sauce
Instructions:
- Cut the vegetables into thin slices or strips.
- In a large bowl, mix together the flour, cold water, and egg until smooth.
- Heat the vegetable oil in a heavy-bottomed pot over medium-high heat.
- Dip the vegetable slices into the batter, letting any excess drip off, and then carefully place into the hot oil.
- Fry until golden brown, about 3-5 minutes, then remove with a slotted spoon and place onto a paper towel to drain.
- Serve hot with tempura dipping sauce.
