Yasai Tempura (Japanese Vegetable Tempura)

Ingredients:

  • 2 cups mix vegetables (like bell peppers, zucchini, carrots, sweet potatoes)
  • 1 cup all-purpose flour
  • 1 cup cold water
  • 1 egg
  • for frying vegetable oil
  • to taste tempura dipping sauce

Instructions:

  1. Cut the vegetables into thin slices or strips.
  2. In a large bowl, mix together the flour, cold water, and egg until smooth.
  3. Heat the vegetable oil in a heavy-bottomed pot over medium-high heat.
  4. Dip the vegetable slices into the batter, letting any excess drip off, and then carefully place into the hot oil.
  5. Fry until golden brown, about 3-5 minutes, then remove with a slotted spoon and place onto a paper towel to drain.
  6. Serve hot with tempura dipping sauce.
