Yakitori (Japanese Grilled Pork Skewers)

Ingredients:

  • 500 grams Boneless pork shoulder
  • 1 cup Japanese soy sauce
  • 1/2 cup Mirin
  • 2 tablespoons Sugar
  • 2 Garlic cloves
  • 12 Bamboo skewers
  • 4 Green onions

Instructions:

  1. Cut the pork shoulder into 1 inch cubes. Soak the bamboo skewers in water for 30 minutes.
  2. In a small saucepan, combine the soy sauce, mirin, sugar, and finely minced garlic. Bring to a boil, then lower the heat and simmer for 10 minutes until slightly thickened. Let cool.
  3. Skewer the pork cubes and green onions alternately onto the bamboo skewers.
  4. Preheat a grill or grill pan over medium heat. Brush the skewers generously with the soy sauce mixture.
  5. Grill the skewers for about 4 minutes on each side, or until the pork is cooked through and slightly charred.
  6. Serve the yakitori skewers with extra soy sauce mixture for dipping.
