
Yakitori (Japanese Grilled Pork Skewers)

Ingredients:
- 500 grams Boneless pork shoulder
- 1 cup Japanese soy sauce
- 1/2 cup Mirin
- 2 tablespoons Sugar
- 2 Garlic cloves
- 12 Bamboo skewers
- 4 Green onions
Instructions:
- Cut the pork shoulder into 1 inch cubes. Soak the bamboo skewers in water for 30 minutes.
- In a small saucepan, combine the soy sauce, mirin, sugar, and finely minced garlic. Bring to a boil, then lower the heat and simmer for 10 minutes until slightly thickened. Let cool.
- Skewer the pork cubes and green onions alternately onto the bamboo skewers.
- Preheat a grill or grill pan over medium heat. Brush the skewers generously with the soy sauce mixture.
- Grill the skewers for about 4 minutes on each side, or until the pork is cooked through and slightly charred.
- Serve the yakitori skewers with extra soy sauce mixture for dipping.
