Yakibuta Ramen

Ingredients:
- 1 kg Pork belly
- 100 ml Soy Sauce
- 100 ml Mirin
- 2 tbsp Sugar
- 2 pcs Garlic cloves
- 1 piece Ginger
- 1.5 l Chicken Stock
- 1 tsp White pepper
- 4 servings Cooked Ramen Noodles
- 4 pcs Boiled Eggs
- 2 pcs Spring Onions
- 100 g Bamboo shoots
Instructions:
- Cut the pork belly into large chunks and sear them until browned.
- Mix the soy sauce, mirin, sugar, chopped garlic and ginger together in a bowl.
- Put the pork belly in a pot, pour the soy sauce mixture on top, and turn on low heat. Let it simmer for about 2 hours.
- Prepare the stock by heat up the chicken stock, add white pepper for some spices.
- Boil the ramen noodles according to package instructions and drain.
- To serve, ladle the broth into a bowl and add the noodles. Top with sliced pork belly, a boiled egg cut in half, and sprinkle with chopped spring onions and bamboo shoots.
