Wild Rice Pilaf with Cranberries and Pecans

Ingredients:

  • 1 cup Wild Rice
  • 2 cups Chicken Broth
  • 2 tablespoons Butter
  • 1 cup Onion, diced
  • 1 cup Dried Cranberries
  • 1 cup Pecans, coarsely chopped and toasted
  • 3 stalks Scallions, chopped
  • to taste Salt and Pepper

Instructions:

  1. In a large saucepan, simmer wild rice in chicken broth until tender, about 50 minutes.
  2. While rice is cooking, melt butter in a pan. Add onions and cook until translucent.
  3. Stir in dried cranberries, pecans, scallions, and cooked wild rice. Season with salt and pepper.
  4. Continue to cook over low heat for 10 more minutes, allowing the flavors to meld together.
  5. Serve hot, with additional garnish of scallions and pecans if desired.
