Wild Rice Pilaf with Cranberries and Pecans

Ingredients:
- 1 cup Wild Rice
- 2 cups Chicken Broth
- 2 tablespoons Butter
- 1 cup Onion, diced
- 1 cup Dried Cranberries
- 1 cup Pecans, coarsely chopped and toasted
- 3 stalks Scallions, chopped
- to taste Salt and Pepper
Instructions:
- In a large saucepan, simmer wild rice in chicken broth until tender, about 50 minutes.
- While rice is cooking, melt butter in a pan. Add onions and cook until translucent.
- Stir in dried cranberries, pecans, scallions, and cooked wild rice. Season with salt and pepper.
- Continue to cook over low heat for 10 more minutes, allowing the flavors to meld together.
- Serve hot, with additional garnish of scallions and pecans if desired.
