Whole Wheat Spaghetti with Roasted Vegetables

Ingredients:

  • 16 ounces Whole Wheat Spaghetti
  • 1.5 cups Cherry Tomatoes
  • 3 Garlic Cloves
  • 2 tablespoons Olive Oil
  • 1 Bell Pepper
  • 1 Courgette
  • To taste Fresh Parsley
  • To taste Salt and Pepper
  • To taste Parmesan Cheese

Instructions:

  1. Preheat the oven to 400°F (200°C). Slice the bell pepper and courgette into small pieces, place them on a baking pan alongside the whole cherry tomatoes and garlic cloves. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for about 20 minutes or until the vegetables are lightly browned and tender.
  2. Meanwhile, cook the whole wheat spaghetti according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti.
  3. In a large pan, heat the remaining tablespoon of olive oil. Add roasted vegetables. Mash the roasted garlic and add it to the pan. Stir in spaghetti and if needed add some of the reserved pasta water to make a light sauce. Season with more salt and pepper if desired.
  4. Serve the pasta in dishes and garnish with fresh parsley and grated parmesan cheese to taste. Enjoy your healthy dinner!
