Whole Wheat Ratatouille Pasta

Ingredients:

  • 200 grams Whole wheat pasta
  • 1 medium Eggplant
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 can Diced tomatoes
  • handful Fresh basil leaves
  • to taste Salt and pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the diced eggplant, zucchini, bell peppers, onion and garlic to the pan. Cook for about 10 minutes, until the vegetables are softened.
  3. Add the can of diced tomatoes, along with salt and pepper to taste. Simmer for 20 minutes.
  4. While the vegetables are simmering, cook the pasta according to the package instructions.
  5. Once the pasta is cooked, drain it and add it to the pan with the vegetables. Stir well to combine.
  6. Tear the basil leaves and stir them into the pasta just before serving.
