
Whole Wheat Ratatouille Pasta

Ingredients:
- 200 grams Whole wheat pasta
- 1 medium Eggplant
- 1 medium Zucchini
- 1 medium Red bell pepper
- 1 medium Yellow bell pepper
- 1 medium Onion
- 2 cloves Garlic
- 2 tablespoons Olive oil
- 1 can Diced tomatoes
- handful Fresh basil leaves
- to taste Salt and pepper
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the diced eggplant, zucchini, bell peppers, onion and garlic to the pan. Cook for about 10 minutes, until the vegetables are softened.
- Add the can of diced tomatoes, along with salt and pepper to taste. Simmer for 20 minutes.
- While the vegetables are simmering, cook the pasta according to the package instructions.
- Once the pasta is cooked, drain it and add it to the pan with the vegetables. Stir well to combine.
- Tear the basil leaves and stir them into the pasta just before serving.
