Whole Wheat Pasta Salad

Ingredients:

  • 2 cups Whole Wheat Pasta
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumbers
  • 0.5 cup Black Olives
  • 0.5 cup Red Onion
  • 0.5 cup Feta Cheese
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon of juice Lemon
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions:

  1. In a large pot of boiling salted water, cook pasta according to package instructions. Drain well and let it cool.
  2. In a large bowl, combine the pasta, tomatoes, cucumber, olives, onions, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. This pasta salad can be served immediately, or you can let it sit in the fridge for a few hours to let the flavors meld together. Enjoy!
