Veggie Stuffed Bell Peppers

Ingredients:

  • 2 cups Mixed Vegetables
  • 6 Bell Peppers
  • 2 tbsp Olive Oil
  • 2 medium Onions
  • 2 Garlic Cloves
  • 1 cup Tomato Sauce
  • 1 cup Cheese
  • 1 cup Bread Crumbs
  • To Taste Salt and Pepper

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cut off the top of the peppers and remove the seeds. Set aside.
  3. Heat oil in a large skillet over medium heat, add the onions and garlic, cook until softened.
  4. Add the mixed vegetables to the skillet, cook until softened.
  5. Add the tomato sauce into the skillet, stir well. Season with salt and pepper.
  6. Stuff the peppers with the vegetable mixture. Place them on a baking dish.
  7. Top each stuffed pepper with bread crumbs and cheese.
  8. Cover with aluminium foil and bake for 20 minutes.
  9. Remove the aluminium foil and bake for another 20-25 minutes, or until the peppers are soft and the cheese is melted and golden.
  10. Allow to cool for a few minutes before serving.
