
Veggie Stuffed Bell Peppers

Ingredients:
- 2 cups Mixed Vegetables
- 6 Bell Peppers
- 2 tbsp Olive Oil
- 2 medium Onions
- 2 Garlic Cloves
- 1 cup Tomato Sauce
- 1 cup Cheese
- 1 cup Bread Crumbs
- To Taste Salt and Pepper
Instructions:
- Preheat oven to 350°F (175°C).
- Cut off the top of the peppers and remove the seeds. Set aside.
- Heat oil in a large skillet over medium heat, add the onions and garlic, cook until softened.
- Add the mixed vegetables to the skillet, cook until softened.
- Add the tomato sauce into the skillet, stir well. Season with salt and pepper.
- Stuff the peppers with the vegetable mixture. Place them on a baking dish.
- Top each stuffed pepper with bread crumbs and cheese.
- Cover with aluminium foil and bake for 20 minutes.
- Remove the aluminium foil and bake for another 20-25 minutes, or until the peppers are soft and the cheese is melted and golden.
- Allow to cool for a few minutes before serving.
