
Vegetable Upma

Ingredients:
- 1 cup Semolina (Sooji/Rava)
- 1 cup Mixed Vegetables (carrots, peas, beans, bell peppers)
- 1 medium size Onion
- 1-2 as per taste Green chili
- 1 inch piece Ginger
- 1 teaspoon Mustard seeds
- 6-8 Curry leaves
- 1 teaspoon Turmeric powder
- 2 tablespoon Oil
- to taste Salt
- 2 cups Water
Instructions:
- Dry-roast the semolina (rava) until it's golden and keep it aside.
- Heat oil in a pan, add mustard seeds and let them crackle. Then add curry leaves.
- Add finely chopped onions, green chili, and grated ginger. Sauté until onion becomes translucent.
- Add mixed vegetables to the pan and cook for 2-3 minutes.
- Add roasted semolina, turmeric powder, salt and mix everything well.
- Add water to the pan and stir continuously to avoid lumps.
- Cover the pan and cook on low heat for 10-12 minutes or until the water is fully absorbed.
- Turn off the heat and let it sit for few minutes.
- Vegetable Upma is ready to serve. Enjoy it hot.
