Vegetable Upma

Ingredients:

  • 1 cup Semolina (Sooji/Rava)
  • 1 cup Mixed Vegetables (carrots, peas, beans, bell peppers)
  • 1 medium size Onion
  • 1-2 as per taste Green chili
  • 1 inch piece Ginger
  • 1 teaspoon Mustard seeds
  • 6-8 Curry leaves
  • 1 teaspoon Turmeric powder
  • 2 tablespoon Oil
  • to taste Salt
  • 2 cups Water

Instructions:

  1. Dry-roast the semolina (rava) until it's golden and keep it aside.
  2. Heat oil in a pan, add mustard seeds and let them crackle. Then add curry leaves.
  3. Add finely chopped onions, green chili, and grated ginger. Sauté until onion becomes translucent.
  4. Add mixed vegetables to the pan and cook for 2-3 minutes.
  5. Add roasted semolina, turmeric powder, salt and mix everything well.
  6. Add water to the pan and stir continuously to avoid lumps.
  7. Cover the pan and cook on low heat for 10-12 minutes or until the water is fully absorbed.
  8. Turn off the heat and let it sit for few minutes.
  9. Vegetable Upma is ready to serve. Enjoy it hot.
