Vegetable Teriyaki Stir-Fry

Ingredients:

  • 4 cups Mixed Vegetables (bell peppers, carrots, broccoli)
  • 2 Garlic Cloves
  • 2 tablespoons Low Sodium Soy Sauce
  • 2 tablespoons Sesame Oil
  • 1 tablespoon Cornstarch
  • 1 cup Water
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Ginger, Grated
  • 2 cups Brown Rice, cooked

Instructions:

  1. In a large skillet or wok, heat sesame oil over medium-high heat.
  2. Add the mixed vegetables and garlic, sauté until just tender, about 5 minutes.
  3. In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, water, and grated ginger. Pour over the vegetables in the skillet.
  4. Continue to cook and stir until the sauce thickens, about 5 more minutes.
  5. Serve the vegetable teriyaki stir-fry over cooked brown rice.
