
Vegetable Teriyaki Stir-Fry

Ingredients:
- 4 cups Mixed Vegetables (bell peppers, carrots, broccoli)
- 2 Garlic Cloves
- 2 tablespoons Low Sodium Soy Sauce
- 2 tablespoons Sesame Oil
- 1 tablespoon Cornstarch
- 1 cup Water
- 1 tablespoon Brown Sugar
- 1 teaspoon Ginger, Grated
- 2 cups Brown Rice, cooked
Instructions:
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add the mixed vegetables and garlic, sauté until just tender, about 5 minutes.
- In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, water, and grated ginger. Pour over the vegetables in the skillet.
- Continue to cook and stir until the sauce thickens, about 5 more minutes.
- Serve the vegetable teriyaki stir-fry over cooked brown rice.
