
Vegetable-Stuffed Portobello Mushrooms

Ingredients:
- 4 pieces Portobello mushroom caps
- 2 tbsp Olive oil
- 2 cloves Garlic
- 2 cups Mixed vegetables
- 1 tsp Italian seasoning
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 1 cup Shredded mozzarella cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- Brush the portobello mushroom caps with olive oil on both sides and arrange them on a baking sheet gill-side up.
- Finely chop the garlic and sauté it in a pan with the mixed vegetables until they're lightly browned. Season with Italian seasoning, salt, and pepper.
- Divide the vegetable mixture equally among the mushroom caps and top each with a sprinkle of mozzarella cheese.
- Bake for 15-20 minutes until the mushrooms are tender and the cheese is melted and slightly browned. Let them cool for a few minutes before serving.
