Vegetable-Stuffed Portobello Mushrooms

Ingredients:

  • 4 pieces Portobello mushroom caps
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 2 cups Mixed vegetables
  • 1 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Brush the portobello mushroom caps with olive oil on both sides and arrange them on a baking sheet gill-side up.
  3. Finely chop the garlic and sauté it in a pan with the mixed vegetables until they're lightly browned. Season with Italian seasoning, salt, and pepper.
  4. Divide the vegetable mixture equally among the mushroom caps and top each with a sprinkle of mozzarella cheese.
  5. Bake for 15-20 minutes until the mushrooms are tender and the cheese is melted and slightly browned. Let them cool for a few minutes before serving.
