
Vegetable Stir Fry with Tofu

Ingredients:
- 2 tablespoons vegetable oil
- 1 block tofu
- 2 cups broccoli florets
- 1 large, sliced red bell pepper
- 2 medium, sliced carrots
- 1 cup snow peas
- 4 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon dissolved in 2 tablespoons water cornstarch
- 2 cloves, minced garlic
- 1 inch fresh, minced ginger
Instructions:
- 1. Press the tofu to remove excess water and cut it into small cubes.
- 2. Heat 1 tablespoon of the vegetable oil in a wok or large pan over medium-high heat. Add the tofu and fry until golden brown on all sides. Remove from the pan and set aside.
- 3. In the same pan, add another tablespoon of oil. Add the garlic and ginger and fry for a minute until fragrant.
- 4. Add the broccoli, bell pepper, and carrots and stir fry for about 5 minutes or until the vegetables are tender-crisp. Add the snow peas and stir fry for another minute.
- 5. In a small bowl, combine the soy sauce, sesame oil, and cornstarch mixture. Pour this sauce over the vegetables in the pan and stir well to coat.
- 6. Return the tofu to the pan and stir to combine with the vegetables and sauce. Cook for another 2-3 minutes, until everything is well heated and the sauce has thickened.
- 7. Serve hot, ideally with steamed rice.
