
Vegetable Stir-fry with Quinoa

Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 1 cup Broccoli
- 1 cup Carrot
- 1 medium size Red bell pepper
- 3 cloves Garlic
- 2 tablespoons Soy sauce
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Pepper
Instructions:
- Rinse the quinoa under cold water until the water runs clear.
- In a pot, bring the water to a boil, then stir in the quinoa. Reduce heat to low, cover and let simmer for 15 minutes until all of the water is absorbed and quinoa is cooked.
- While the quinoa is cooking, wash and chop the vegetables into bite-sized pieces.
- Chop garlic into fine pieces.
- Heat the olive oil in a wok or large skillet over medium heat. Add the garlic and cook until fragrant.
- Add the carrots, broccoli, and bell pepper to the pan. Drizzle with soy sauce, and season with salt and pepper.
- Stir-fry the veggies until they're tender, about 5-7 minutes.
- Fluff the cooked quinoa with a fork, then add it to the skillet and mix well with the veggies.
- Serve the stir-fry hot, enjoy your quick and healthy dinner!
