Vegetable Stir-fry with Quinoa

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Broccoli
  • 1 cup Carrot
  • 1 medium size Red bell pepper
  • 3 cloves Garlic
  • 2 tablespoons Soy sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions:

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a pot, bring the water to a boil, then stir in the quinoa. Reduce heat to low, cover and let simmer for 15 minutes until all of the water is absorbed and quinoa is cooked.
  3. While the quinoa is cooking, wash and chop the vegetables into bite-sized pieces.
  4. Chop garlic into fine pieces.
  5. Heat the olive oil in a wok or large skillet over medium heat. Add the garlic and cook until fragrant.
  6. Add the carrots, broccoli, and bell pepper to the pan. Drizzle with soy sauce, and season with salt and pepper.
  7. Stir-fry the veggies until they're tender, about 5-7 minutes.
  8. Fluff the cooked quinoa with a fork, then add it to the skillet and mix well with the veggies.
  9. Serve the stir-fry hot, enjoy your quick and healthy dinner!
