
Vegetable Stir Fry with Jasmine Rice

Ingredients:
- 2 tbsp Vegetable oil
- 1 Onion
- 2 Garlic cloves
- 1 Bell peppers
- 2 Carrots
- 1 cup Broccoli florets
- 1 cup Snow peas
- 3 tbsp Soy sauce
- 1 cup Jasmine rice
- 2 cups Water
Instructions:
- Prepare the jasmine rice according to package instructions. Set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic. Sauté until they are fragrant and the onion is translucent.
- Add the chopped bell peppers, carrots, broccoli florets, and snow peas to the pan. Sauté for about 5-7 minutes, or until the vegetables are tender.
- Pour in the soy sauce and stir well to coat the vegetables. Allow the mixture to simmer for 2-3 minutes.
- Serve the vegetable stir fry hot over jasmine rice. Enjoy your satisfying and comforting midnight meal.
