Vegetable Stir Fry with Jasmine Rice

Ingredients:

  • 2 tbsp Vegetable oil
  • 1 Onion
  • 2 Garlic cloves
  • 1 Bell peppers
  • 2 Carrots
  • 1 cup Broccoli florets
  • 1 cup Snow peas
  • 3 tbsp Soy sauce
  • 1 cup Jasmine rice
  • 2 cups Water

Instructions:

  1. Prepare the jasmine rice according to package instructions. Set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic. Sauté until they are fragrant and the onion is translucent.
  3. Add the chopped bell peppers, carrots, broccoli florets, and snow peas to the pan. Sauté for about 5-7 minutes, or until the vegetables are tender.
  4. Pour in the soy sauce and stir well to coat the vegetables. Allow the mixture to simmer for 2-3 minutes.
  5. Serve the vegetable stir fry hot over jasmine rice. Enjoy your satisfying and comforting midnight meal.
