Vegetable Stir Fry

Ingredients:

  • 4 cups Assorted vegetables (carrots, bell peppers, broccoli, snap peas, etc.)
  • 2 cloves Garlic
  • 1 inch Fresh ginger
  • 3 tablespoons Low-sodium soy sauce
  • 2 tablespoons Sesame oil
  • 4 cups Cooked brown rice

Instructions:

  1. 1. Cut the vegetables into bite-size pieces.
  2. 2. Mince the garlic and ginger.
  3. 3. Heat a large skillet over medium heat and add sesame oil.
  4. 4. Add the minced garlic and ginger to the skillet. Stir-fry for about 30 seconds until fragrant.
  5. 5. Add the vegetables to the skillet and stir-fry for about 5-7 minutes until vegetables are tender.
  6. 6. Drizzle soy sauce over the vegetables and stir to combine.
  7. 7. Serve the stir fry over a bed of cooked brown rice. Enjoy!
