
Vegetable Stir Fry

Ingredients:
- 4 cups Assorted vegetables (carrots, bell peppers, broccoli, snap peas, etc.)
- 2 cloves Garlic
- 1 inch Fresh ginger
- 3 tablespoons Low-sodium soy sauce
- 2 tablespoons Sesame oil
- 4 cups Cooked brown rice
Instructions:
- 1. Cut the vegetables into bite-size pieces.
- 2. Mince the garlic and ginger.
- 3. Heat a large skillet over medium heat and add sesame oil.
- 4. Add the minced garlic and ginger to the skillet. Stir-fry for about 30 seconds until fragrant.
- 5. Add the vegetables to the skillet and stir-fry for about 5-7 minutes until vegetables are tender.
- 6. Drizzle soy sauce over the vegetables and stir to combine.
- 7. Serve the stir fry over a bed of cooked brown rice. Enjoy!
