Total Time: 1 hour

Ingredients:

  • 2 cups All-purpose flour
  • 1 cup Vegetable oil
  • 1 teaspoon Cumin seeds
  • 2 cups Finely diced potatoes
  • 1 cup Chopped green peas
  • 1 cup Finely chopped carrot
  • 2 pieces Chopped green chili pepper
  • 1 teaspoon Garam masala
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1/2 cup Water

Instructions:

  1. In a bowl, mix flour and salt together. Add 1/4 cup of vegetable oil and mix until the mixture resembles breadcrumbs. Add water a little at a time to make a firm dough. Cover with damp cloth and set aside.
  2. Heat 2 tablespoons of oil in a frying pan, add cumin seeds, and once they start to darken, add chopped vegetables, green chili, garam masala, turmeric, and salt. Stir fry for about 10 minutes or until vegetables are cooked.
  3. Roll the dough into small circles, cut each circle into half. Shape each half into a cone and fill with the vegetable mixture. Seal the edges using a little water.
  4. Heat the remaining oil in a deep pan and fry the samosas on medium heat until they turn golden brown.
  5. Serve the vegetable samosas hot with your favorite chutney or ketchup.
