Vegetable Quiche

Ingredients:
- 1 piece Pie crust (homemade or store bought)
- 2 tablespoons Olive oil
- 1 medium sized, chopped Onion
- 2 cup, chopped Bell peppers
- 1 cup, chopped Zucchini
- 1 cup Spinach
- 5 large Eggs
- 1 cup Milk
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup, shredded Cheddar cheese
Instructions:
- Preheat the oven to 375°F (190°C). Place pie crust in a 9-inch pie dish.
- In a large skillet, heat olive oil over medium heat. Add the onions, bell peppers, and zucchini, cooking until softened.
- Add the spinach and cook until just wilted. Remove from heat.
- In a large bowl, beat together eggs, milk, salt, and pepper. Stir in the cooked vegetables and shredded cheese.
- Pour the egg mixture into the pie crust. Bake for 45-50 minutes, or until the quiche is set and lightly browned on top.
- Remove from the oven and let cool for a few minutes before slicing and serving.
