Vegetable Quiche

Ingredients:

  • 1 piece Pie crust (homemade or store bought)
  • 2 tablespoons Olive oil
  • 1 medium sized, chopped Onion
  • 2 cup, chopped Bell peppers
  • 1 cup, chopped Zucchini
  • 1 cup Spinach
  • 5 large Eggs
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup, shredded Cheddar cheese

Instructions:

  1. Preheat the oven to 375°F (190°C). Place pie crust in a 9-inch pie dish.
  2. In a large skillet, heat olive oil over medium heat. Add the onions, bell peppers, and zucchini, cooking until softened.
  3. Add the spinach and cook until just wilted. Remove from heat.
  4. In a large bowl, beat together eggs, milk, salt, and pepper. Stir in the cooked vegetables and shredded cheese.
  5. Pour the egg mixture into the pie crust. Bake for 45-50 minutes, or until the quiche is set and lightly browned on top.
  6. Remove from the oven and let cool for a few minutes before slicing and serving.
