Vegetable Pot Pie

Ingredients:
- 2 cups all-purpose flour
- 1 stick butter
- 1 egg
- 2 cups vegetable broth
- 4 cups mixed vegetables
- 1 onion
- 1 teaspoon salt
- 0.5 teaspoon pepper
Instructions:
- Preheat oven to 375 degrees.
- In a large frying pan, melt half the butter and sauté the onion until translucent.
- Add the vegetables, broth, salt and pepper. Let it simmer for about 10 minutes.
- While the filling is cooking, prepare the pie crust. In a large bowl, combine flour and salt. Cut in the remaining butter until the mixture resembles coarse crumbs.
- Add the beaten egg and mix until you can form a ball. Roll out the dough and fit it into a pie plate.
- Once the vegetables are tender, transfer the mixture into the prepared crust.
- Cover with the second crust, trim and pinch the edges, and cut few slits in the top crust for the steam to escape.
- Bake in the preheated oven for about 35 to 45 minutes, or until the crust is golden brown.
- Let it cool for a few minutes before serving.
