Vegetable Pot Pie

Ingredients:

  • 2 cups all-purpose flour
  • 1 stick butter
  • 1 egg
  • 2 cups vegetable broth
  • 4 cups mixed vegetables
  • 1 onion
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Instructions:

  1. Preheat oven to 375 degrees.
  2. In a large frying pan, melt half the butter and sauté the onion until translucent.
  3. Add the vegetables, broth, salt and pepper. Let it simmer for about 10 minutes.
  4. While the filling is cooking, prepare the pie crust. In a large bowl, combine flour and salt. Cut in the remaining butter until the mixture resembles coarse crumbs.
  5. Add the beaten egg and mix until you can form a ball. Roll out the dough and fit it into a pie plate.
  6. Once the vegetables are tender, transfer the mixture into the prepared crust.
  7. Cover with the second crust, trim and pinch the edges, and cut few slits in the top crust for the steam to escape.
  8. Bake in the preheated oven for about 35 to 45 minutes, or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.
