Vegetable Poha

Ingredients:

  • 2 cups Poha (Flattened Rice)
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Turmeric Powder
  • 2 pieces Green Chilies
  • 1 large Onion
  • 1/2 cup Peas
  • 1 medium Carrot
  • 1 medium Capsicum
  • 1 tablespoon Lemon Juice
  • for garnish Fresh Coriander Leaves
  • to taste Salt
  • 2 teaspoons Vegetable Oil

Instructions:

  1. Wash the poha in cold water, drain, and keep it aside for 10-15 minutes.
  2. Heat oil in a pan, add mustard seeds and let them crackle.
  3. Add chopped onions and green chilies to the pan and sauté until the onions become translucent.
  4. Add diced carrots, peas, and capsicum to the pan and stir fry for a few minutes.
  5. Add turmeric powder and salt to the pan and mix well.
  6. Now add the soaked poha to the pan and gently mix everything together.
  7. Cook for 5-6 minutes on low heat, stirring occasionally.
  8. Turn off the heat and add lemon juice to the poha. Mix well.
  9. Garnish with fresh coriander leaves before serving.
