
Vegetable Poha

Ingredients:
- 2 cups Poha (Flattened Rice)
- 1 teaspoon Mustard Seeds
- 1 teaspoon Turmeric Powder
- 2 pieces Green Chilies
- 1 large Onion
- 1/2 cup Peas
- 1 medium Carrot
- 1 medium Capsicum
- 1 tablespoon Lemon Juice
- for garnish Fresh Coriander Leaves
- to taste Salt
- 2 teaspoons Vegetable Oil
Instructions:
- Wash the poha in cold water, drain, and keep it aside for 10-15 minutes.
- Heat oil in a pan, add mustard seeds and let them crackle.
- Add chopped onions and green chilies to the pan and sauté until the onions become translucent.
- Add diced carrots, peas, and capsicum to the pan and stir fry for a few minutes.
- Add turmeric powder and salt to the pan and mix well.
- Now add the soaked poha to the pan and gently mix everything together.
- Cook for 5-6 minutes on low heat, stirring occasionally.
- Turn off the heat and add lemon juice to the poha. Mix well.
- Garnish with fresh coriander leaves before serving.
