Vegetable Biryani

Ingredients:

  • 2 cups Basmati Rice
  • 3 cups Mixed Vegetables (carrots, peas, bell peppers)
  • 1 Onion
  • 2 Tomato
  • 3 cloves Garlic
  • 1 inch piece Ginger
  • 1 Green chili
  • 2 tablespoons Ghee
  • 1 Bay leaf
  • 4 pieces Cloves
  • 1 inch piece Cinnamon Stick
  • 2 pods Cardamom
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chili powder
  • 2 teaspoons Biryani masala
  • to taste Salt
  • for garnish Coriander leaves

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. Heat the ghee in a large pan over medium heat. Add the bay leaf, cloves, cinnamon stick, and cardamom and fry for a few seconds.
  3. Add sliced onion to the pan and sauté until it turns golden brown. Add minced garlic, ginger, and chopped green chili, and sauté for another couple of minutes.
  4. Add mixed vegetables to the pan and sauté for 5 minutes. Then add chopped tomatoes, turmeric powder, red chili powder, biryani masala, and salt to the pan and cook until tomatoes are soft.
  5. Add the drained rice to the pan and gently mix everything together. Add 4 cups of water, increase the heat to high, and bring it to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and cook for 20 minutes or until the rice is cooked and the water is absorbed. Avoid stirring the rice while it's cooking.
  7. Turn off the heat and let the biryani stand for 10 minutes before fluffing the rice gently with a fork. Garnish with coriander leaves.
