Vegan Curried Lentils with Spinach

Ingredients:

  • 1 cup dry lentils
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon coriander powder
  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 4 minced garlic cloves
  • 2 medium, chopped fresh tomatoes
  • 3 cups vegetable broth
  • 4 cups, chopped spinach
  • to taste salt
  • to taste black pepper

Instructions:

  1. Rinse lentils in cold water until water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is translucent and garlic is fragrant.
  3. Add the spices (turmeric, chili, and coriander powder) to the onion and garlic mixture. Stir to combine and cook for another minute.
  4. Add chopped tomatoes to the pot and cook until they start to break down and form a sauce.
  5. Add lentils and vegetable broth to the pot. Bring the mixture to a boil and then reduce heat to low. Cover and let simmer for about 20 minutes, or until the lentils are cooked through.
  6. Finally, add the chopped spinach to the pot. Stir until the spinach has wilted into the lentil curry.
  7. Season with salt and pepper to taste. Serve hot with steamed rice or warm naan bread for a delicious Indian lunch.
