
Vegan Curried Lentils with Spinach

Ingredients:
- 1 cup dry lentils
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon coriander powder
- 2 tablespoons olive oil
- 1 large, diced onion
- 4 minced garlic cloves
- 2 medium, chopped fresh tomatoes
- 3 cups vegetable broth
- 4 cups, chopped spinach
- to taste salt
- to taste black pepper
Instructions:
- Rinse lentils in cold water until water runs clear.
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is translucent and garlic is fragrant.
- Add the spices (turmeric, chili, and coriander powder) to the onion and garlic mixture. Stir to combine and cook for another minute.
- Add chopped tomatoes to the pot and cook until they start to break down and form a sauce.
- Add lentils and vegetable broth to the pot. Bring the mixture to a boil and then reduce heat to low. Cover and let simmer for about 20 minutes, or until the lentils are cooked through.
- Finally, add the chopped spinach to the pot. Stir until the spinach has wilted into the lentil curry.
- Season with salt and pepper to taste. Serve hot with steamed rice or warm naan bread for a delicious Indian lunch.
