
Unagi Don (Broiled Eel over Rice)

Ingredients:
- 2 cups Japanese short-grain rice
- 3 cups Water
- 1 package Unagi (pre-cooked eel)
- 4 tablespoons Unagi sauce
- 1 tablespoon Japanese sake
- 1 tablespoon Mirin (Japanese sweet rice wine)
- 1 teaspoon Soy sauce
- to taste White sesame seeds
- to taste Chopped fresh scallions
Instructions:
- Wash the rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- While the rice is cooking, preheat your oven's broiler. Place the unagi on a foil-lined baking sheet, then brush both sides with sake.
- Broil the unagi for about 5 minutes, or until it's heated through and starts to crisp around the edges. Cut the eel into bite-sized pieces.
- In a small saucepan, combine the unagi sauce, mirin, and soy sauce. Bring to a simmer over medium heat, then remove from the heat.
- To serve, divide the cooked rice among 4 bowls. Top each serving of rice with pieces of the broiled eel, then drizzle with the sauce mixture. Sprinkle with sesame seeds and chopped scallions, and serve.
