
Traditional French Breakfast Salmon Crepes

Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1.5 cup milk
- 3 tablespoon unsalted butter
- 200 grams smoked salmon
- 1/2 cup cream cheese
- 2 tablespoon chives
- to taste salt
- to taste pepper
Instructions:
- In a large bowl, combine flour, eggs, milk, and 1 tablespoon of butter. Whisk until the mix is smooth.
- Heat a non-stick frying pan over medium heat. Add a dab of butter to coat.
- Pour 1/4 cup of crepe batter into the pan, tilting to completely coat the surface of the pan. Cook 2-3 minutes, flip and cook for another 2 minutes. Set aside, and repeat with remaining batter.
- Spread cream cheese evenly over the crepes. Top with slices of smoked salmon and sprinkle with chopped chives, salt, and pepper.
- Roll up the crepes and serve them warm.
