Traditional French Breakfast Salmon Crepes

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cup milk
  • 3 tablespoon unsalted butter
  • 200 grams smoked salmon
  • 1/2 cup cream cheese
  • 2 tablespoon chives
  • to taste salt
  • to taste pepper

Instructions:

  1. In a large bowl, combine flour, eggs, milk, and 1 tablespoon of butter. Whisk until the mix is smooth.
  2. Heat a non-stick frying pan over medium heat. Add a dab of butter to coat.
  3. Pour 1/4 cup of crepe batter into the pan, tilting to completely coat the surface of the pan. Cook 2-3 minutes, flip and cook for another 2 minutes. Set aside, and repeat with remaining batter.
  4. Spread cream cheese evenly over the crepes. Top with slices of smoked salmon and sprinkle with chopped chives, salt, and pepper.
  5. Roll up the crepes and serve them warm.
