
Thai Vegetable Stir-Fry

Ingredients:
- 2 tbsp Vegetable oil
- 2 cloves Garlic
- 1 inch piece Ginger
- 4 cups Fresh vegetables (e.g., bell peppers, broccoli, carrots)
- 4 tbsp Soy sauce
- 1 tbsp Sriracha sauce
- 1 tbsp Honey
- 1 whole Lime
- 1/2 cup Fresh basil leaves
Instructions:
- 1. Heat the vegetable oil in a large pan over medium heat.
- 2. Chop the garlic and ginger finely, then add to the pan. Stir for 1-2 minutes until they start to soften.
- 3. Chop the fresh vegetables into bite-sized pieces then add to the pan. Stir-fry for about 5-7 minutes, until the vegetables are tender.
- 4. In a small bowl, mix together the soy sauce, Sriracha, and honey. Stir this sauce into the pan with the vegetables.
- 5. Squeeze the juice of the lime over the stir-fry, then stir in the fresh basil leaves.
- 6. Serve the stir-fry over cooked quinoa or brown rice for a filling, healthy meal.
