Thai Vegetable Stir-Fry

Ingredients:

  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 4 cups Fresh vegetables (e.g., bell peppers, broccoli, carrots)
  • 4 tbsp Soy sauce
  • 1 tbsp Sriracha sauce
  • 1 tbsp Honey
  • 1 whole Lime
  • 1/2 cup Fresh basil leaves

Instructions:

  1. 1. Heat the vegetable oil in a large pan over medium heat.
  2. 2. Chop the garlic and ginger finely, then add to the pan. Stir for 1-2 minutes until they start to soften.
  3. 3. Chop the fresh vegetables into bite-sized pieces then add to the pan. Stir-fry for about 5-7 minutes, until the vegetables are tender.
  4. 4. In a small bowl, mix together the soy sauce, Sriracha, and honey. Stir this sauce into the pan with the vegetables.
  5. 5. Squeeze the juice of the lime over the stir-fry, then stir in the fresh basil leaves.
  6. 6. Serve the stir-fry over cooked quinoa or brown rice for a filling, healthy meal.
