Thai Vegetable Omelette

Ingredients:

  • 8 Eggs
  • 2 cups Mixed vegetables (carrots, peas, corn, bell peppers)
  • 2 stalks Green Onion
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Fish Sauce
  • 2 Thai chili peppers, finely chopped
  • 1 teaspoon Garlic, minced
  • 2 tablespoons Vegetable Oil

Instructions:

  1. In a large bowl, whisk the eggs, soy sauce and fish sauce together.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the garlic and chili pepper. Cook until fragrant.
  3. Add the mixed vegetables to the skillet. Stir-fry until the vegetables are tender.
  4. Pour the egg mixture over the vegetables in the skillet. Scatter the chopped green onion on top.
  5. Cover the skillet and reduce the heat to low. Cook until the eggs are set, about 5-8 minutes.
  6. Gently slide the omelette onto a plate. Serve hot.
