
Thai Vegetable Omelette

Ingredients:
- 8 Eggs
- 2 cups Mixed vegetables (carrots, peas, corn, bell peppers)
- 2 stalks Green Onion
- 2 tablespoons Soy Sauce
- 1 teaspoon Fish Sauce
- 2 Thai chili peppers, finely chopped
- 1 teaspoon Garlic, minced
- 2 tablespoons Vegetable Oil
Instructions:
- In a large bowl, whisk the eggs, soy sauce and fish sauce together.
- Heat the vegetable oil in a large skillet over medium heat. Add the garlic and chili pepper. Cook until fragrant.
- Add the mixed vegetables to the skillet. Stir-fry until the vegetables are tender.
- Pour the egg mixture over the vegetables in the skillet. Scatter the chopped green onion on top.
- Cover the skillet and reduce the heat to low. Cook until the eggs are set, about 5-8 minutes.
- Gently slide the omelette onto a plate. Serve hot.
