
Thai Style Steamed Fish

Ingredients:
- 2 piece White fish fillet
- 2 stalks Lemongrass
- 2 cloves Garlic cloves
- 1 piece Red chili
- 3 leaves Lime leaves
- 2 tablespoons Fish sauce
- 1 piece Lime
- 1 teaspoon Brown sugar
- 1 inch piece Ginger
- handful Coriander
Instructions:
- Prepare the fish by cleaning and placing them on a plate which you can later move into your steamer.
- Crush lemongrass stalks, finely chop the garlic cloves and red chili. Slice lime leaves and ginger into thin strips and set all aside
- In a separate bowl, mix together fish sauce, juice from the lime, and brown sugar until the sugar is dissolved.
- Combine all the ingredients: pour the sauce onto the fish and then evenly distribute lemongrass, garlic, chili, lime leaves and ginger over the fish.
- Place the plate with the fish in a steamer and let it steam for about 15 to 20 minutes or until fish is nicely cooked.
- Garnish with fresh coriander and serve immediately. This dish can be serves as a snack in smaller portions, or as a main course for a lighter dinner.
