
Thai-Style Quinoa and Vegetable Lettuce Wraps

Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 2 tablespoons Low-sodium soy sauce
- 1 tablespoon Honey
- 1 tablespoon Ginger, finely grated
- 2 cloves Garlic, minced
- 2 cups Mixed vegetables, finely chopped (carrot, bell pepper, peas)
- 8 leaves Romaine lettuce leaves, rinsed and dried
- to taste Fresh cilantro leaves, for topping
Instructions:
- Rinse the quinoa under cold water until the water runs clear. Bring the quinoa and water to a boil in a medium saucepan. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, prepare the sauce. In a small bowl, whisk together the soy sauce, honey, ginger, and garlic. Set aside.
- In a large pan over medium heat, sauté the mixed vegetables until they are just tender. Then stir in the cooked quinoa and the sauce, mixing well to combine.
- To serve, spoon the quinoa and vegetable mixture into each lettuce leaf.
- Top each wrap with fresh cilantro leaves for additional flavor before serving. Enjoy!
