Thai-Style Quinoa and Vegetable Lettuce Wraps

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Ginger, finely grated
  • 2 cloves Garlic, minced
  • 2 cups Mixed vegetables, finely chopped (carrot, bell pepper, peas)
  • 8 leaves Romaine lettuce leaves, rinsed and dried
  • to taste Fresh cilantro leaves, for topping

Instructions:

  1. Rinse the quinoa under cold water until the water runs clear. Bring the quinoa and water to a boil in a medium saucepan. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the quinoa is tender and the water has been absorbed.
  2. While the quinoa is cooking, prepare the sauce. In a small bowl, whisk together the soy sauce, honey, ginger, and garlic. Set aside.
  3. In a large pan over medium heat, sauté the mixed vegetables until they are just tender. Then stir in the cooked quinoa and the sauce, mixing well to combine.
  4. To serve, spoon the quinoa and vegetable mixture into each lettuce leaf.
  5. Top each wrap with fresh cilantro leaves for additional flavor before serving. Enjoy!
