
Thai Style Quick & Easy Pasta

Ingredients:
- 400 grams Spaghetti Pasta
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 Red Bell Pepper
- 3 Green Onions
- 1 Carrot
- 4 tablespoons Soy Sauce
- 2 tablespoons Peanut Butter
- 1 cup Coconut milk
- for garnish Cilantro
Instructions:
- Prepare the spaghetti pasta according to package directions.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the garlic and sauté until fragrant.
- Add the sliced bell pepper, chopped green onions, and grated carrot to the skillet. Stir fry for a few minutes.
- In a small bowl, whisk together soy sauce, peanut butter, and coconut milk.
- Once pasta is cooked, drain and add to the skillet.
- Pour the sauce over the pasta and vegetables. Toss until everything is well-coated with the sauce.
- Serve hot, garnished with fresh cilantro.
