Thai Style Quick & Easy Pasta

Ingredients:

  • 400 grams Spaghetti Pasta
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 Red Bell Pepper
  • 3 Green Onions
  • 1 Carrot
  • 4 tablespoons Soy Sauce
  • 2 tablespoons Peanut Butter
  • 1 cup Coconut milk
  • for garnish Cilantro

Instructions:

  1. Prepare the spaghetti pasta according to package directions.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the garlic and sauté until fragrant.
  4. Add the sliced bell pepper, chopped green onions, and grated carrot to the skillet. Stir fry for a few minutes.
  5. In a small bowl, whisk together soy sauce, peanut butter, and coconut milk.
  6. Once pasta is cooked, drain and add to the skillet.
  7. Pour the sauce over the pasta and vegetables. Toss until everything is well-coated with the sauce.
  8. Serve hot, garnished with fresh cilantro.
