Thai Style Pork Omelette

Ingredients:

  • 8 unit Eggs
  • 0.5 pound Lean ground pork
  • 2 unit Spring onions
  • 2 cloves Garlic
  • 2 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 3 tablespoons Sunflower oil
  • 1 unit Red chili
  • To taste Black pepper

Instructions:

  1. In a mixing bowl, beat the eggs until well mixed. Set aside.
  2. In a separate bowl, mix the ground pork with the fish sauce and soy sauce. Set aside for 10 minutes to marinate.
  3. Heat one tablespoon of sunflower oil in a frying pan over medium heat. Add the garlic and cook until golden brown.
  4. Increase the heat to high, add the marinated pork and cook until all the meat changes color.
  5. Reduce the heat to medium and pour in the beaten eggs, stirring briefly to mix the eggs with the meat.
  6. Scatter the chopped spring onions and sliced red chili over the top.
  7. Cover the pan with a lid and cook for about 3-4 minutes, or until the base and edges are golden.
  8. Once the omelette is cooked to your liking, season with black pepper, slice, and serve hot.
