
Thai Style Pork Omelette

Ingredients:
- 8 unit Eggs
- 0.5 pound Lean ground pork
- 2 unit Spring onions
- 2 cloves Garlic
- 2 tablespoons Fish sauce
- 2 tablespoons Soy sauce
- 3 tablespoons Sunflower oil
- 1 unit Red chili
- To taste Black pepper
Instructions:
- In a mixing bowl, beat the eggs until well mixed. Set aside.
- In a separate bowl, mix the ground pork with the fish sauce and soy sauce. Set aside for 10 minutes to marinate.
- Heat one tablespoon of sunflower oil in a frying pan over medium heat. Add the garlic and cook until golden brown.
- Increase the heat to high, add the marinated pork and cook until all the meat changes color.
- Reduce the heat to medium and pour in the beaten eggs, stirring briefly to mix the eggs with the meat.
- Scatter the chopped spring onions and sliced red chili over the top.
- Cover the pan with a lid and cook for about 3-4 minutes, or until the base and edges are golden.
- Once the omelette is cooked to your liking, season with black pepper, slice, and serve hot.
