
Thai Style Healthy Pasta Salad

Ingredients:
- 100 grams Whole grain pasta
- 200 grams Lean chicken breast
- 1 medium sized Red bell pepper
- 1 small Onion
- 2 cloves Garlic
- 1 tablespoon Lime juice
- 1 tablespoon Soy sauce
- 2 tablespoons Fresh cilantro
- 8 pieces Cherry tomatoes
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- While the pasta is cooking, fillet the chicken and cut into strips. Cut the bell pepper and onion into bite-sized pieces.
- Heat some olive oil in a pan over medium heat. Add the onion, garlic, and chicken and cook until chicken is cooked through and onion is translucent.
- In a large bowl, combine the cooked pasta, chicken, bell pepper, onion, cherry tomatoes. Toss with lime juice and soy sauce until everything is evenly coated. Top with fresh cilantro before serving.
