Thai Style Healthy Pasta Salad

Ingredients:

  • 100 grams Whole grain pasta
  • 200 grams Lean chicken breast
  • 1 medium sized Red bell pepper
  • 1 small Onion
  • 2 cloves Garlic
  • 1 tablespoon Lime juice
  • 1 tablespoon Soy sauce
  • 2 tablespoons Fresh cilantro
  • 8 pieces Cherry tomatoes

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. While the pasta is cooking, fillet the chicken and cut into strips. Cut the bell pepper and onion into bite-sized pieces.
  3. Heat some olive oil in a pan over medium heat. Add the onion, garlic, and chicken and cook until chicken is cooked through and onion is translucent.
  4. In a large bowl, combine the cooked pasta, chicken, bell pepper, onion, cherry tomatoes. Toss with lime juice and soy sauce until everything is evenly coated. Top with fresh cilantro before serving.
