Thai-style Healthy Egg Stir Fry

Ingredients:

  • 6 Eggs
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 2 Chili peppers
  • 1 Onion
  • 1 Red bell pepper
  • 2 Carrots
  • 1 cup Peas
  • 2 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 1 tsp Brown sugar
  • 0.5 cup Thai basil leaves

Instructions:

  1. In a bowl, beat the eggs.
  2. Heat 1 tablespoon of vegetable oil in a wok or large pan over medium heat.
  3. Add the beaten eggs, scramble until cooked then remove and set aside in a bowl.
  4. Add another tablespoon of oil to the pan and stir fry garlic, chili peppers and onion for a few minutes until fragrant and slightly softened.
  5. Add the red bell pepper and carrots to the pan and continue to stir fry for a few more minutes.
  6. Stir in peas and return the scrambled eggs to the pan.
  7. Pour in fish sauce, soy sauce and brown sugar. Stir well to combine.
  8. Lastly, toss in the Thai basil leaves, stir for another 30 seconds then remove from heat.
  9. Serve immediately with steamed jasmine rice if desired. Enjoy your healthy Thai-style Egg Stir Fry!
