
Thai-style Healthy Egg Stir Fry

Ingredients:
- 6 Eggs
- 2 tbsp Vegetable oil
- 2 cloves Garlic
- 2 Chili peppers
- 1 Onion
- 1 Red bell pepper
- 2 Carrots
- 1 cup Peas
- 2 tbsp Fish sauce
- 1 tbsp Soy sauce
- 1 tsp Brown sugar
- 0.5 cup Thai basil leaves
Instructions:
- In a bowl, beat the eggs.
- Heat 1 tablespoon of vegetable oil in a wok or large pan over medium heat.
- Add the beaten eggs, scramble until cooked then remove and set aside in a bowl.
- Add another tablespoon of oil to the pan and stir fry garlic, chili peppers and onion for a few minutes until fragrant and slightly softened.
- Add the red bell pepper and carrots to the pan and continue to stir fry for a few more minutes.
- Stir in peas and return the scrambled eggs to the pan.
- Pour in fish sauce, soy sauce and brown sugar. Stir well to combine.
- Lastly, toss in the Thai basil leaves, stir for another 30 seconds then remove from heat.
- Serve immediately with steamed jasmine rice if desired. Enjoy your healthy Thai-style Egg Stir Fry!
