
Thai-style Healthy Egg Breakfast Scramble

Ingredients:
- 4 Eggs
- 1 tbsp Olive oil
- 1 medium, finely chopped Red bell pepper
- 3 stalks, chopped Green onions
- 2 cloves, minced Garlic
- 1 juiced Lime
- 1 tbsp Low sodium soy sauce
- As needed chopped Fresh coriander
- To taste Chilli flakes
Instructions:
- Crack the eggs into a bowl and whisk until the yolks and whites are fully combined.
- Heat the olive oil in a non-stick frying pan over medium heat.
- Add the red bell pepper to the pan and sauté until softened.
- Add the green onions and garlic to the pan and continue to sauté until fragrant.
- Lower the heat and pour the beaten eggs into the pan. Let them sit undisturbed for a few seconds until they start to set around the edges.
- Gently stir the eggs, lifting and folding over from the bottom of the pan.
- When the eggs are mostly cooked but still slightly runny, remove the pan from the heat. The residual heat will continue to cook the eggs slightly.
- Drizzle the lime juice and soy sauce over the eggs.
- Sprinkle with chopped fresh coriander and chilli flakes to taste, and serve immediately.
