Thai-style Healthy Egg Breakfast Scramble

Ingredients:

  • 4 Eggs
  • 1 tbsp Olive oil
  • 1 medium, finely chopped Red bell pepper
  • 3 stalks, chopped Green onions
  • 2 cloves, minced Garlic
  • 1 juiced Lime
  • 1 tbsp Low sodium soy sauce
  • As needed chopped Fresh coriander
  • To taste Chilli flakes

Instructions:

  1. Crack the eggs into a bowl and whisk until the yolks and whites are fully combined.
  2. Heat the olive oil in a non-stick frying pan over medium heat.
  3. Add the red bell pepper to the pan and sauté until softened.
  4. Add the green onions and garlic to the pan and continue to sauté until fragrant.
  5. Lower the heat and pour the beaten eggs into the pan. Let them sit undisturbed for a few seconds until they start to set around the edges.
  6. Gently stir the eggs, lifting and folding over from the bottom of the pan.
  7. When the eggs are mostly cooked but still slightly runny, remove the pan from the heat. The residual heat will continue to cook the eggs slightly.
  8. Drizzle the lime juice and soy sauce over the eggs.
  9. Sprinkle with chopped fresh coriander and chilli flakes to taste, and serve immediately.
