Thai Style Fruit Salad with Grilled Chicken

Ingredients:

  • 4 pieces Chicken breasts
  • 2 cups Mixed fruit (papaya, mango, pineapple, etc.)
  • 2 pieces Thai chili
  • 1 clove Garlic
  • 2 tablespoons Fish sauce
  • 1 piece Lime
  • 1 tablespoon Brown sugar
  • 1 handful Fresh mint leaves
  • 1 handful Fresh cilantro leaves

Instructions:

  1. 1. Preheat a grill to medium-high heat. Season the chicken breasts with salt and pepper and grill until cooked through, about 6-7 minutes per side. Let rest for a few minutes then slice into strips.
  2. 2. While the chicken is grilling, prepare the dressing. In a mortar and pestle, pound the Thai chili and garlic into a paste. Add the fish sauce, juice of a lime, and brown sugar and mix until well combined.
  3. 3. In a large bowl, combine the mixed fruits, chicken, dressing, mint, and cilantro. Toss everything together until well coated in the dressing.
