Thai Style Fried Rice Breakfast

Ingredients:

  • 1 cup Jasmine Rice
  • 2 whole Eggs
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1/2 cup Green peas
  • 1 small Carrot
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Spring onions

Instructions:

  1. Cook the Jasmine rice according to package instructions and set aside.
  2. Whisk the eggs in a bowl and season with a pinch of salt.
  3. Heat 1 tablespoon of vegetable oil over medium heat, add whisked eggs and scramble. Remove from heat and set aside.
  4. In the same pan, add another tablespoon of oil. Add minced garlic and diced onion, sauté until fragrant.
  5. Add diced carrots and peas, cook until they soften.
  6. Add cooked rice to the pan, mix well with the veggies.
  7. Pour soy sauce and sesame oil over the rice, mix well ensuring every grain is coated.
  8. Add scrambled eggs and chopped spring onions, give it a final mix.
  9. Serve the Thai fried rice hot, garnish with additional spring onions if desired.
