
Thai Style Fried Rice Breakfast

Ingredients:
- 1 cup Jasmine Rice
- 2 whole Eggs
- 2 tablespoons Vegetable oil
- 2 cloves Garlic
- 1 medium Onion
- 1/2 cup Green peas
- 1 small Carrot
- 2 tablespoons Soy Sauce
- 1 teaspoon Sesame oil
- 2 stalks Spring onions
Instructions:
- Cook the Jasmine rice according to package instructions and set aside.
- Whisk the eggs in a bowl and season with a pinch of salt.
- Heat 1 tablespoon of vegetable oil over medium heat, add whisked eggs and scramble. Remove from heat and set aside.
- In the same pan, add another tablespoon of oil. Add minced garlic and diced onion, sauté until fragrant.
- Add diced carrots and peas, cook until they soften.
- Add cooked rice to the pan, mix well with the veggies.
- Pour soy sauce and sesame oil over the rice, mix well ensuring every grain is coated.
- Add scrambled eggs and chopped spring onions, give it a final mix.
- Serve the Thai fried rice hot, garnish with additional spring onions if desired.
