Thai Style Fish & Brown Rice Porridge

Ingredients:

  • 500 grams Boneless white fish fillets
  • 1 cup Brown rice
  • 2 tablespoons Fish sauce
  • 1 whole Lime
  • 4 stalks Spring onions
  • 1 bunch Fresh coriander leaves
  • 1 whole Fresh red chili
  • 2 whole Garlic cloves
  • 1 tablespoon Olive oil

Instructions:

  1. Cook the brown rice in a pot with 4 cups of water until it becomes porridge-like.
  2. While the rice is cooking, heat the olive oil in a pan.
  3. Slice the fish fillets into bite-sized pieces, season with a pinch of salt and pepper, and sear them in the pan until golden brown.
  4. Transfer the cooked fish to the pot with the rice.
  5. Add the fish sauce, squeezed lime juice, and finely chopped garlic to the pot.
  6. Stir and simmer for a couple of minutes.
  7. Ladle the porridge into bowls and garnish with chopped spring onions, coriander leaves, and some slices of red chili.
  8. Serve hot.
