
Thai Style Fish & Brown Rice Porridge

Ingredients:
- 500 grams Boneless white fish fillets
- 1 cup Brown rice
- 2 tablespoons Fish sauce
- 1 whole Lime
- 4 stalks Spring onions
- 1 bunch Fresh coriander leaves
- 1 whole Fresh red chili
- 2 whole Garlic cloves
- 1 tablespoon Olive oil
Instructions:
- Cook the brown rice in a pot with 4 cups of water until it becomes porridge-like.
- While the rice is cooking, heat the olive oil in a pan.
- Slice the fish fillets into bite-sized pieces, season with a pinch of salt and pepper, and sear them in the pan until golden brown.
- Transfer the cooked fish to the pot with the rice.
- Add the fish sauce, squeezed lime juice, and finely chopped garlic to the pot.
- Stir and simmer for a couple of minutes.
- Ladle the porridge into bowls and garnish with chopped spring onions, coriander leaves, and some slices of red chili.
- Serve hot.
