Thai Style Fish and Rice Soup

Ingredients:

  • 1 lb White fish fillets
  • 1 cup Rice
  • 4 cups Water
  • 2 tablespoons Fish sauce
  • 1 Lemongrass stalk
  • 1 inch piece Fresh ginger
  • 2 Garlic cloves
  • 1 Red chilli
  • Handful Fresh coriander
  • 1 Lime
  • 2 Spring onions

Instructions:

  1. In a large pot add the water, lemongrass, ginger, garlic, and chilli. Bring to a boil over medium-high heat.
  2. Once boiling, add the rice and reduce the heat to low. Cover and let simmer for about 20 minutes, or until the rice is soft.
  3. Cut the fish into small pieces and add to the pot. Cook for another 5-10 minutes, or until the fish is cooked through.
  4. Remove from the heat and add the fish sauce, fresh coriander, juice of the lime, and chopped spring onions. Stir well to combine and serve hot.
