
Thai Style Fish and Rice Soup

Ingredients:
- 1 lb White fish fillets
- 1 cup Rice
- 4 cups Water
- 2 tablespoons Fish sauce
- 1 Lemongrass stalk
- 1 inch piece Fresh ginger
- 2 Garlic cloves
- 1 Red chilli
- Handful Fresh coriander
- 1 Lime
- 2 Spring onions
Instructions:
- In a large pot add the water, lemongrass, ginger, garlic, and chilli. Bring to a boil over medium-high heat.
- Once boiling, add the rice and reduce the heat to low. Cover and let simmer for about 20 minutes, or until the rice is soft.
- Cut the fish into small pieces and add to the pot. Cook for another 5-10 minutes, or until the fish is cooked through.
- Remove from the heat and add the fish sauce, fresh coriander, juice of the lime, and chopped spring onions. Stir well to combine and serve hot.
