
Thai-style Exotic Pasta

Ingredients:
- 400 grams Pasta
- 400 ml Coconut milk
- 2 tablespoons Red curry paste
- 2 tablespoons Brown sugar
- 1 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 2 cloves Crushed garlic
- 1/2 cup Chopped fresh basil
- 1 whole Sliced red bell pepper
- 1 whole Sliced onion
- 300 grams Diced chicken breast
Instructions:
- Cook pasta as per instructions on the box. Drain and set aside.
- In a large skillet, heat 1 tablespoon of oil over high heat. Add onion and bell pepper slices, cook until slightly softened.
- Add chicken to the pan, cook until browned and cooked through.
- Add crushed garlic, stir until fragrant.
- Lower the heat and add red curry paste, stir until well mixed.
- Add in the coconut milk, stir until well combined with the curry paste.
- Add brown sugar, fish sauce, and lime juice. Stir well and let it simmer for a few minutes to blend the flavors.
- Add the cooked pasta to the pan, toss well with the curry sauce until the pasta is completely coated.
- Before serving, sprinkle with chopped fresh basil. Enjoy your Thai-style exotic pasta hot!
