Thai-style Exotic Pasta

Ingredients:

  • 400 grams Pasta
  • 400 ml Coconut milk
  • 2 tablespoons Red curry paste
  • 2 tablespoons Brown sugar
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 2 cloves Crushed garlic
  • 1/2 cup Chopped fresh basil
  • 1 whole Sliced red bell pepper
  • 1 whole Sliced onion
  • 300 grams Diced chicken breast

Instructions:

  1. Cook pasta as per instructions on the box. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of oil over high heat. Add onion and bell pepper slices, cook until slightly softened.
  3. Add chicken to the pan, cook until browned and cooked through.
  4. Add crushed garlic, stir until fragrant.
  5. Lower the heat and add red curry paste, stir until well mixed.
  6. Add in the coconut milk, stir until well combined with the curry paste.
  7. Add brown sugar, fish sauce, and lime juice. Stir well and let it simmer for a few minutes to blend the flavors.
  8. Add the cooked pasta to the pan, toss well with the curry sauce until the pasta is completely coated.
  9. Before serving, sprinkle with chopped fresh basil. Enjoy your Thai-style exotic pasta hot!
