Thai-Style Exotic Fish Curry

Ingredients:

  • 4 pieces White fish fillets
  • 2 cups Coconut milk
  • 3 tablespoons Thai green curry paste
  • 2 tablespoons Fish sauce
  • 1 tablespoon Sugar
  • 4 leaves Kaffir lime leaves
  • Handful Basil leaves
  • 1 pepper Red bell pepper
  • 1 lime Zest and juice of a lime
  • Handful Fresh coriander leaves
  • to serve Steamed jasmine rice

Instructions:

  1. Heat a large frying pan or wok over medium heat. Add the green curry paste and stir-fry for 1-2 minutes, or until aromatic.
  2. Stir in the coconut milk and bring to a simmer. Add the fish sauce, sugar, lime leaves, and the lime zest, mix well.
  3. Add the fish fillets to the pan, ensuring they are covered in the sauce. Cook for about 10 minutes, or until the fish is just cooked through.
  4. Add the chopped red bell pepper, lime juice, and a handful of basil leaves. Cook for an extra 2 minutes.
  5. Serve the curry over steamed jasmine rice, garnished with fresh coriander leaves. Enjoy your Thai-style exotic fish curry!
