
Thai-Style Exotic Fish Curry

Ingredients:
- 4 pieces White fish fillets
- 2 cups Coconut milk
- 3 tablespoons Thai green curry paste
- 2 tablespoons Fish sauce
- 1 tablespoon Sugar
- 4 leaves Kaffir lime leaves
- Handful Basil leaves
- 1 pepper Red bell pepper
- 1 lime Zest and juice of a lime
- Handful Fresh coriander leaves
- to serve Steamed jasmine rice
Instructions:
- Heat a large frying pan or wok over medium heat. Add the green curry paste and stir-fry for 1-2 minutes, or until aromatic.
- Stir in the coconut milk and bring to a simmer. Add the fish sauce, sugar, lime leaves, and the lime zest, mix well.
- Add the fish fillets to the pan, ensuring they are covered in the sauce. Cook for about 10 minutes, or until the fish is just cooked through.
- Add the chopped red bell pepper, lime juice, and a handful of basil leaves. Cook for an extra 2 minutes.
- Serve the curry over steamed jasmine rice, garnished with fresh coriander leaves. Enjoy your Thai-style exotic fish curry!
