Thai Style Egg Curry

Ingredients:

  • 8 units Eggs
  • 1 can Coconut Milk
  • 3 tablespoons Red Curry Paste
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1/2 cup Basil Leaves
  • 2 tablespoons Oil
  • 4 servings Cooked Rice

Instructions:

  1. 1. Hard boil the eggs, peel them and set aside.
  2. 2. Heat oil in a pan and add the red curry paste. Cook for 2-3 minutes.
  3. 3. Pour in the coconut milk and bring it to a simmer.
  4. 4. Stir in the fish sauce and sugar until well incorporated.
  5. 5. Add the hard boiled eggs and cook for another 2-3 minutes in the curry sauce.
  6. 6. Toss in the fresh basil leaves, cover the pan and remove from the heat. Let it stand for a minute for the flavors to meld together.
  7. 7. Serve the Thai style egg curry on a bed of rice, ensuring each serving gets two eggs.
