
Thai Style Egg Curry

Ingredients:
- 8 units Eggs
- 1 can Coconut Milk
- 3 tablespoons Red Curry Paste
- 1 tablespoon Fish Sauce
- 1 tablespoon Sugar
- 1/2 cup Basil Leaves
- 2 tablespoons Oil
- 4 servings Cooked Rice
Instructions:
- 1. Hard boil the eggs, peel them and set aside.
- 2. Heat oil in a pan and add the red curry paste. Cook for 2-3 minutes.
- 3. Pour in the coconut milk and bring it to a simmer.
- 4. Stir in the fish sauce and sugar until well incorporated.
- 5. Add the hard boiled eggs and cook for another 2-3 minutes in the curry sauce.
- 6. Toss in the fresh basil leaves, cover the pan and remove from the heat. Let it stand for a minute for the flavors to meld together.
- 7. Serve the Thai style egg curry on a bed of rice, ensuring each serving gets two eggs.
