
Thai Style Egg Crepes

Ingredients:
- 4 pieces Eggs
- 1 cup All purpose flour
- 1 cup Water
- 2 tablespoons Soy sauce
- 1 bunch, finely chopped Spring onions
- 2 tablespoons Vegetable oil
Instructions:
- In a large bowl, combine the eggs, flour and water until smooth.
- Stir in the soy sauce and chopped spring onions.
- Heat the oil in a frying pan over medium heat.
- Pour a small amount of the egg mixture into the pan and swirl to cover the base.
- Cook the crepe for 1-2 minutes, or until the base is lightly browned.
- Flip the crepe and cook for an additional 1-2 minutes.
- Repeat with the remaining egg mixture.
- Serve the crepes hot, with additional soy sauce if desired.
