Thai Style Egg Crepes

Ingredients:

  • 4 pieces Eggs
  • 1 cup All purpose flour
  • 1 cup Water
  • 2 tablespoons Soy sauce
  • 1 bunch, finely chopped Spring onions
  • 2 tablespoons Vegetable oil

Instructions:

  1. In a large bowl, combine the eggs, flour and water until smooth.
  2. Stir in the soy sauce and chopped spring onions.
  3. Heat the oil in a frying pan over medium heat.
  4. Pour a small amount of the egg mixture into the pan and swirl to cover the base.
  5. Cook the crepe for 1-2 minutes, or until the base is lightly browned.
  6. Flip the crepe and cook for an additional 1-2 minutes.
  7. Repeat with the remaining egg mixture.
  8. Serve the crepes hot, with additional soy sauce if desired.
