Thai Style Comfort Seafood Noodles

Ingredients:

  • 200 grams Rice noodles
  • 500 grams Mixed seafood (shrimp, squid, mussels)
  • 2 tablespoons Red curry paste
  • 1 can Coconut milk
  • 1 handful Thai basil leaves
  • 2 tablespoons Lime juice
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 3 cloves Garlic
  • 2 pieces Chilies
  • 2 tablespoons Oil

Instructions:

  1. Prepare the rice noodles according to the package instructions.
  2. In a large wok, heat the oil over medium heat.
  3. Add the garlic and chilies, sauté until fragrant.
  4. Stir in the red curry paste and let it cook for a minute.
  5. Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Let it simmer until it thickens slightly.
  6. Add the seafood, stir to coat them with the sauce, and let it cook until they are done.
  7. Add the cooked noodles and stir to combine with the sauce.
  8. Toss in the Thai basil leaves and give it a final mix.
  9. Serve warm with extra lime slices on top.
