
Thai Style Comfort Seafood Noodles

Ingredients:
- 200 grams Rice noodles
- 500 grams Mixed seafood (shrimp, squid, mussels)
- 2 tablespoons Red curry paste
- 1 can Coconut milk
- 1 handful Thai basil leaves
- 2 tablespoons Lime juice
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 3 cloves Garlic
- 2 pieces Chilies
- 2 tablespoons Oil
Instructions:
- Prepare the rice noodles according to the package instructions.
- In a large wok, heat the oil over medium heat.
- Add the garlic and chilies, sauté until fragrant.
- Stir in the red curry paste and let it cook for a minute.
- Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Let it simmer until it thickens slightly.
- Add the seafood, stir to coat them with the sauce, and let it cook until they are done.
- Add the cooked noodles and stir to combine with the sauce.
- Toss in the Thai basil leaves and give it a final mix.
- Serve warm with extra lime slices on top.
