
Thai Style Comfort Pork Stir-fry

Ingredients:
- 1 pound Pork loin
- 2 tablespoons Thai Red Curry Paste
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 cup Coconut milk
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown sugar
- Handful Basil leaves
- 3 Garlic cloves
- 2 tablespoons Cooking oil
- To taste Salt
- 4 servings Cooked rice
Instructions:
- Heat the oil in a large pan or wok over medium-high heat.
- Add the diced pork loin and salt, stir-fry until brown. Remove from the pan and set aside.
- In the same pan, sauté the garlic until golden, then add the Thai red curry paste.
- Stir well and cook for about 1 minute until the paste becomes aromatic.
- Add the sliced bell peppers to the pan and stir-fry until they slightly soften.
- Return the pork to the pan. Add the coconut milk, fish sauce, and brown sugar. Stir well to coat the pork and veggies evenly.
- Simmer on medium heat for about 10 minutes until the pork is fully cooked and the sauce has thickened.
- Turn off the heat. Add a handful of fresh basil leaves, and give it a final stir.
- Serve immediately over cooked rice. Garnish with some extra basil leaves if desired.
