Thai Style Comfort Pork Stir-fry

Ingredients:

  • 1 pound Pork loin
  • 2 tablespoons Thai Red Curry Paste
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 1 cup Coconut milk
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown sugar
  • Handful Basil leaves
  • 3 Garlic cloves
  • 2 tablespoons Cooking oil
  • To taste Salt
  • 4 servings Cooked rice

Instructions:

  1. Heat the oil in a large pan or wok over medium-high heat.
  2. Add the diced pork loin and salt, stir-fry until brown. Remove from the pan and set aside.
  3. In the same pan, sauté the garlic until golden, then add the Thai red curry paste.
  4. Stir well and cook for about 1 minute until the paste becomes aromatic.
  5. Add the sliced bell peppers to the pan and stir-fry until they slightly soften.
  6. Return the pork to the pan. Add the coconut milk, fish sauce, and brown sugar. Stir well to coat the pork and veggies evenly.
  7. Simmer on medium heat for about 10 minutes until the pork is fully cooked and the sauce has thickened.
  8. Turn off the heat. Add a handful of fresh basil leaves, and give it a final stir.
  9. Serve immediately over cooked rice. Garnish with some extra basil leaves if desired.
