Thai Style Comfort Eggs Snack

Ingredients:

  • 4 pieces Eggs
  • 1 bunch Sweet Basil
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Chili flakes
  • 2 tablespoons Fish sauce
  • 1 tablespoon Oyster sauce
  • 3 cloves Garlic
  • 1 teaspoon Sugar

Instructions:

  1. 1. Chop the garlic and the basil leaves.
  2. 2. Heat the vegetable oil in a pan over medium heat.
  3. 3. Add the garlic and chili flakes. Stir-fry until aromatic.
  4. 4. Crack the eggs into the pan. Cook until the edges are crispy but the yolk is still runny.
  5. 5. Add the fish sauce, the oyster sauce and the sugar. Stir well.
  6. 6. Add the chopped basil leaves. Stir briefly until wilted.
  7. 7. Divide into two servings and serve immediately with warm jasmine rice, if desired.
