
Thai-style Comfort Egg Stir-fry

Ingredients:
- 8 Eggs
- 2 tbsp Vegetable oil
- 2 Garlic cloves, minced
- 1 Red bell pepper, sliced
- 3 Green onions, sliced
- 2 tbsp Soy sauce
- 1 tbsp Fish sauce
- 1 tsp Sugar
- Handful Fresh basil leaves
Instructions:
- In a bowl, beat the eggs well and set aside.
- Heat the vegetable oil in a large pan over medium heat.
- Add the minced garlic to the pan and saute until fragrant.
- Add the red bell pepper to the pan and cook until it starts to soften.
- Pour the beaten eggs into the pan and let them set for a moment before stirring.
- Add the sliced green onions, soy sauce, fish sauce, and sugar. Stir well to combine.
- Once the eggs are fully cooked, remove the pan from the heat and stir in the fresh basil leaves.
