Thai Style Comfort Breakfast Scramble

Ingredients:

  • 8 units Eggs
  • 1/2 cup Thai Basil
  • 2 units Spring Onions
  • 2 cloves Garlic
  • 1 unit Red Chili Peppers
  • 2 tablespoons Light Soy Sauce
  • 1 tablespoon Oyster Sauce
  • 2 tablespoons Oil

Instructions:

  1. 1. Beat the eggs in a bowl until scrambled.
  2. 2. Finely chop the spring onions, garlic, and red chili pepper.
  3. 3. Heat oil in a pan and add the garlic and red chili pepper. Saute until the garlic browns.
  4. 4. Add the beaten eggs into the pan, stirring occasionally.
  5. 5. When the eggs start to get firm, add the light soy sauce and oyster sauce. Mix well.
  6. 6. Add the Thai basil and spring onions, stir until they wilt into the eggs.
  7. 7. Serve hot with a side of toasted bread or rice for a fulfilling Thai comfort breakfast.
