
Thai Style Breakfast Pasta

Ingredients:
- 200 grams Whole wheat spaghetti
- 2 tablespoons Extra virgin olive oil
- 1 Red bell pepper
- 1 Carrot
- 2 stalks Green onion
- 2 Garlic cloves
- 4 Large eggs
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- 1 Lime
- to taste Crushed red pepper flakes
- handful Fresh cilantro
Instructions:
- Cook the whole wheat spaghetti according to the package instructions until al dente. Drain, rinse under cold water and set aside.
- Slice the red bell pepper and carrot into thin strips. Thinly slice the green onion, separating the white and green parts. Finely chop the garlic.
- Heat the olive oil in a large skillet over medium heat. Add the red bell pepper, carrot, white parts of the green onion, and garlic. Stir-fry for about 5 minutes.
- Move the vegetables to one side of the pan. Crack the eggs into the other side, breaking the yolks and stirring to scramble. Once the eggs are cooked, mix them into the vegetables.
- Return the cooked spaghetti to the pan, along with the soy sauce and sesame oil. Toss well to combine and heat through.
- Stir in the green parts of the green onion, juice from the lime, and crushed red pepper flakes. Adjust seasoning if needed.
- Serve hot, garnished with fresh cilantro. Enjoy your Thai style breakfast pasta.
