Thai Style Breakfast Beef Curry

Ingredients:

  • 1 pound Beef chuck or brisket
  • 1 cup Spinach
  • 1/2 cup Fresh Thai basil
  • 2 Thai chilies
  • 2/3 cup Coconut milk
  • 3 tablespoons Yellow curry paste
  • 2 tablespoons Fish sauce
  • 3 Garlic cloves, minced
  • to taste Salt
  • for serving Cooked jasmine rice

Instructions:

  1. Cut the beef into small chunks and set aside.
  2. In a large pan, heat a small amount of oil over medium heat and add the curry paste, stirring till fragrant.
  3. Add the beef to the pan and sear until all sides are browned.
  4. Add in the coconut milk and bring the mixture to a simmer.
  5. Reduce heat to low, cover the pan, and let it simmer for about 30 minutes, or until the beef is tender.
  6. Add in the minced garlic, fish sauce, Thai chilies, and salt. Continue to simmer for another 10 minutes.
  7. Right before serving, add in the fresh spinach and Thai basil, allowing the leaves to wilt into the curry.
  8. Serve this aromatic Thai breakfast curry over cooked jasmine rice. Enjoy this exotic breakfast any day of the week!
