Thai Style Breakfast Beef Curry

Ingredients:
- 1 pound Beef chuck or brisket
- 1 cup Spinach
- 1/2 cup Fresh Thai basil
- 2 Thai chilies
- 2/3 cup Coconut milk
- 3 tablespoons Yellow curry paste
- 2 tablespoons Fish sauce
- 3 Garlic cloves, minced
- to taste Salt
- for serving Cooked jasmine rice
Instructions:
- Cut the beef into small chunks and set aside.
- In a large pan, heat a small amount of oil over medium heat and add the curry paste, stirring till fragrant.
- Add the beef to the pan and sear until all sides are browned.
- Add in the coconut milk and bring the mixture to a simmer.
- Reduce heat to low, cover the pan, and let it simmer for about 30 minutes, or until the beef is tender.
- Add in the minced garlic, fish sauce, Thai chilies, and salt. Continue to simmer for another 10 minutes.
- Right before serving, add in the fresh spinach and Thai basil, allowing the leaves to wilt into the curry.
- Serve this aromatic Thai breakfast curry over cooked jasmine rice. Enjoy this exotic breakfast any day of the week!
