
Thai Steamed Fish

Ingredients:
- 1 kg Whole fish (such as sea bass, snapper)
- 2 stalks Lemongrass stalks
- 2 cloves Garlic cloves
- 1 Red chili
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 1 teaspoon Sugar
- 1 handful Fresh coriander leaves
- 1 handful Fresh Thai basil leaves
Instructions:
- Clean the fish and make sure all scales are removed. Make 3-4 deep incisions on each side of the fish.
- Crush the lemongrass stalks, chop the garlic finely and slice the red chili. Combine these with fish sauce, lime juice and sugar in a bowl to make the sauce.
- Place the fish on a dish or in a steaming basket. Pour the prepared sauce over the fish, ensuring it goes into the incisions.
- Steam the fish over high heat for about 15-20 minutes, or until the fish is cooked through.
- Sprinkle fresh coriander and Thai basil leaves over the fish before serving.
