Thai Steamed Fish

Ingredients:

  • 1 kg Whole fish (such as sea bass, snapper)
  • 2 stalks Lemongrass stalks
  • 2 cloves Garlic cloves
  • 1 Red chili
  • 2 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 1 teaspoon Sugar
  • 1 handful Fresh coriander leaves
  • 1 handful Fresh Thai basil leaves

Instructions:

  1. Clean the fish and make sure all scales are removed. Make 3-4 deep incisions on each side of the fish.
  2. Crush the lemongrass stalks, chop the garlic finely and slice the red chili. Combine these with fish sauce, lime juice and sugar in a bowl to make the sauce.
  3. Place the fish on a dish or in a steaming basket. Pour the prepared sauce over the fish, ensuring it goes into the incisions.
  4. Steam the fish over high heat for about 15-20 minutes, or until the fish is cooked through.
  5. Sprinkle fresh coriander and Thai basil leaves over the fish before serving.
