Thai Spiced Fish

Ingredients:

  • 4 pieces Cod fillets
  • 2 stalks Lemongrass
  • 2 pieces Garlic cloves
  • 1 inch piece Ginger
  • 2 pieces Red chillies
  • 2 tbs Fish sauce
  • 1 piece Lime
  • 1 bunch Coriander
  • 1 tsp Sea salt
  • 1 tsp Black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Brush the cod fillets with oil and season with salt and pepper. Place them in a baking dish.
  3. To prepare the Thai spice mix, in a mortar combine chopped lemongrass, minced garlic and ginger, chopped red chillies, and a squeeze of lime. Crush all the ingredients to create a paste.
  4. Spread the Thai spice paste over the cod fillets, pressing it down into the fish.
  5. Drizzle the fish sauce over the coated fish fillets.
  6. Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily when tested with a fork.
  7. Garnish with fresh coriander and serve with lime wedges. Enjoy your Thai Spiced Fish!
