
Thai Spiced Fish

Ingredients:
- 4 pieces Cod fillets
- 2 stalks Lemongrass
- 2 pieces Garlic cloves
- 1 inch piece Ginger
- 2 pieces Red chillies
- 2 tbs Fish sauce
- 1 piece Lime
- 1 bunch Coriander
- 1 tsp Sea salt
- 1 tsp Black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Brush the cod fillets with oil and season with salt and pepper. Place them in a baking dish.
- To prepare the Thai spice mix, in a mortar combine chopped lemongrass, minced garlic and ginger, chopped red chillies, and a squeeze of lime. Crush all the ingredients to create a paste.
- Spread the Thai spice paste over the cod fillets, pressing it down into the fish.
- Drizzle the fish sauce over the coated fish fillets.
- Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily when tested with a fork.
- Garnish with fresh coriander and serve with lime wedges. Enjoy your Thai Spiced Fish!
