Thai Shrimp Curry

Ingredients:

  • 1 lb raw shrimp
  • 2 tablespoons Thai green curry paste
  • 1 can coconut milk
  • 1 cup frozen peas
  • 1 red bell pepper
  • 3 cloves garlic
  • handful fresh basil leaves
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar

Instructions:

  1. Heat the oil in a large pan over medium heat. Add the curry paste and garlic, cook for 1-2 minutes until fragrant.
  2. Add the coconut milk to the pan, stir until the curry paste has dissolved.
  3. Add the fish sauce and brown sugar to the pan, stir to combine.
  4. Add the shrimp, peas and bell pepper to the pan, simmer for 10-12 minutes until the shrimp are cooked through.
  5. Stir in the basil leaves, remove the pan from the heat.
  6. Serve the curry over rice for a complete meal.
