
Thai Shrimp Curry

Ingredients:
- 1 lb raw shrimp
- 2 tablespoons Thai green curry paste
- 1 can coconut milk
- 1 cup frozen peas
- 1 red bell pepper
- 3 cloves garlic
- handful fresh basil leaves
- 2 tablespoons vegetable oil
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
Instructions:
- Heat the oil in a large pan over medium heat. Add the curry paste and garlic, cook for 1-2 minutes until fragrant.
- Add the coconut milk to the pan, stir until the curry paste has dissolved.
- Add the fish sauce and brown sugar to the pan, stir to combine.
- Add the shrimp, peas and bell pepper to the pan, simmer for 10-12 minutes until the shrimp are cooked through.
- Stir in the basil leaves, remove the pan from the heat.
- Serve the curry over rice for a complete meal.
